The First Day of the Rest of Isaac’s Life

Today we embark on our first day on the Specific Carbohydrate Diet.  I have written a few articles describing the diet and what we hope to accomplish as a family.  ”Looking for Advice,” ”Breaking the Vicious Cycle,”  and “Lactose-Free Yogurt” all deal with the Specific Carbohydrate Diet (SCD). 

Today we begin our 365 day journey to heal our gut, especially Isaac’s, who suffers from what is most likely Celiac disease.  It has not been medically diagnosed; however, he has all the classic symptoms of the disease.  Following the advice of a doctor, we decided against the invasive, but reliable test because of Isaac’s age.

I will periodically update you on our well-being, our struggles, and our year following the SCD protocol to heal our gut and cure Celiac disease in Isaac.  We are all hoping to see some improvement in our own lives as a healthy gut is beneficial to everyone.  The next two days will be tough as we are the most restricted during the introduction diet.  Most people experience flu-like symptoms as bad bacteria and yeast die off.  To help flush your body, you eat as much chicken soup as you can. 

Everyone knows that chicken soup is healing and restorative.  It is also comfort food.  In addition to chicken soup, I boiled free range eggs for snacks.  I made apple cider jigglers with water, plain gelatin, and of course apple cider.  I have SCD-legal yogurt finishing up in the fridge for day 3, when we will begin trying to get good bacteria back in the gut.

Yesterday I made Dry Curd Cottage Cheese from our raw goat milk.  It looks interesting and I have not yet decided how I am going to use it, but I have it.  I could not find any in our area so I made some.  Cheese-making is certainly an experience.  I will write about it next week.

Isaac woke up this morning and came to my bedroom door.  I opened it and was struck by his “Good morning, Mommy! Are we on the diet now?”  I said, “Yes, Isaac, today we start the diet.”  He replied, “I am sooo excited!”  I had to drop to my knees and give him a big hug and kiss. 

So Isaac, your whole family loves you.  We are praying for complete healing and success on the Specific Carbohydrate Diet.  We want this to be the first day of the rest of your life.  And God-willing, it will.

    Isaac,

    I too began the spdiet so we can make the year long journey together. My hopes are for a healed gut and to be free of celiac too.
