Lactose-Free Yogurt
My family is going to go on the Specific Carbohydrate Diet in April in the hopes of healing everyone’s gut for better health and hopefully for less restrictive eating in the future. My main source for the diet is Elaine Gottschall’s book, Breaking the Vicious Cycle.
The Specific Carbohydrate Diet (SCD) is truly a gluten-free diet. Sugars are not allowed unless it is a monosaccharide like honey. Therefore even lactose, which is a milk sugar, is illegal on the diet. However, those on the diet rely heavily on homemade lactose-free yogurt.
Even though we have not started the diet, I decided to make some lactose-free goat yogurt. And, it is to die for! You start it the same way as any other homemade yogurt. The difference is that I let it cook for an entire 24 hours in my Yogourmet machine. Then you let it cool for eight hours before eating it.
You do not need a yogurt-making appliance to successfully make yogurt. My sister-in-law uses a glass jars of milk in a water bath in her crockpot. She constantly watches the temperature and makes the necessary adjustments. There are several other ways including using an oven or a heating pad.

I have made many batches of yogurt using my Yogourmet maker. You only cook traditional yogurt for 4 hours. In the past, I have added plain gelatin to help give a good texture since homemade yogurt tends to be thin. Cooking the yogurt for 24 hours might use up all the lactose, but it also makes the yogurt thick and creamy. It is really delicious. I couldn’t be happier with it.
Whether you are following the SCD eating guidelines or not, making lactose-free yogurt is easy to do. It is healthy. And, it requires little attention with a Yogourmet Yogurt Maker.
