Laura,

You have that right. The pies were the best that I had ever eaten. I just wish I had bought more than one pumpkin and that Reformation Day hadn't fallen on a Saturday as we don't regularly shop on Sunday. If I can find more though, I'll definitely buy one or two more.

Great, Karen. It isn't hard. Although, it is easier to open a can. I bet that the pies taste so good and fresh that you will balk at using canned pumpkin again.

Laura, I got 7 - 2 C servings from my pumpkin. I make my first two pumpkin pies from scratch. It was easier than I imagined. I'm hoping to get my hands on another. Around here, I use pumpkin all year round.

I love making pumpkin puree from scratch! I usually roast my pumpkins to do it though. Thanks for sharing this with the Homesteading Carnival!

Great! Let me know how many cups of puree you put up. I'd like to know how big this pumpkin was.
